Spanish Omelette with Chorizo

I had the potatoes ready to use but in case you don’t know how to shorten the time for this recipe, here’s the shortcut:

Get some potatoes, wash them and prick them with a knitting needle or anything pointy and put them in the microwave for 10 minutes approximately   If you don’t have a microwave, steam them till they’re soft.

Now that we have the preliminaries, let’s get going with the omelette.

Put some olive oil in a pan and lightly fry some onion.

Then throw in some chorizo and then the potato in small chunks.

When you’ve cooked it a bit, beat a couple of eggs in a bowl and add the potato and chorizo in that bowl. Mix.

Put some more olive oil in the pan and pour the contents of the bowl.

whenever you think it’s ready, turn it over and pour another egg on top so that you get an extra layer of egg.  Pour the beaten egg  just before your omelette is ready, that way the egg will be like a soft boiled egg. (delicious!)

Get your omelette out and serve!
