There is nothing like simple courgettes, no fussing, no messing, just courgette cut into thick slices.
- Cut into thick triangles, squares or whatever you like.
- Keep the skin on
- Lightly fry in a little olive oil
- Add some salt
- Close the pan and leave for 1 minute
- Open the pan
- Serve on a plate
- Add some salt again
- Add some Olive oil
- Add some Basil and that’s it.
Just serve and eat it hot.
