Quiche Whatever

The most important thing is the base.  No base, no quiche.  The filling can be anything you like.

Here are the ingredients for the base:

  • 200 gr of flour
  • A pinch of salt
  • 100 gr of butter
  • 75 ml of cold water

I made a smaller quiche so I used less ingredients.

This is how you make the base.

  • Put the flour in a bowl and add a pinch of salt.
  • Cut up the butter, put it on top of the flour and work it with your fingers.

Then add the water and keep working till you get a ball like this and there is no flour or anything else left in the bowl.

  • Squash that ball and make it flat.
  • Put some cling film on a dish.
  • Put some flour on the dough and put that flat dough on the cling film.

and leave that in the fridge for a couple of hours in the fridge.  I left it for about 10 minutes….

When your get your dough out of the fridge, roll it out in the shape of your baking pan.

Prick the dough with a fork and put that in the oven to bake a bit.

Then go and grate some cheese

 

 


After that, you mix a couple of eggs with either cream or milk, I used milk.


And then get your choice filling ready.

I used some weird invention I had made that had ended up being quite delicious.  I took that out of the freezer, defrosted it and got that ready.

 

 

 

 

 

 

 

 

(This mixture, was made with “morcilla” black saussage, port, paté, onion and God knows what else.)  You can add anything you like!

Then I cut up some courgette…

And started with the filling. first the weird mixture

And then, in the oven it goes!

It’s lovely when it’s hot but it’s also very good when cold;  it’s ideal for pique-nicks.

 

As for fillings, I’ve made them with tomatoes, ham, prawns, asparagus, well, anything I’ve had at hand and this is something easy and quick to make if you have a surprise visit.
