This is not only a cheap recipe but a very easy one to make. You can have a lunch ready in less than 15 minutes.
All you need is:
- garlic cloves
- salted codfish
- fish stock
You chop the garlic cloves and put them in the pan with olive oil or whatever oil you have (I prefer olive oil).
Then you chop the cauliflower and put it in the pan and stir a bit
While the cauliflower starts cooking, get your piece of salted cod
and tear it into small bits
then add it to the pan and stir again.
Then you add the rice and stir.
Straight after that you add the fish stock.
close the pan and let it cook for about 8 minutes
As to quantities, well, I chopped 4 big cloves of garlic and only a small piece of salted cod.
For Rice, I used 2 cups of coffee filled with rice, not coffee.
The proportion rice and water is:
for each cup/glass of rice = one and a half cup/glass of water
Regarding the fish stock: I used half a stock cube but all you have to think is that one of those cubes will make a litre of fish stock so it’s up to you how you like your food.
Once thing I would definitely advice here is NOT TO PUT SALT – Please don’t put salt in this dish.
