White Beans Summer Salad

Oh! it’s so hot and I’m bored of rice and something, pasta and something, potatoes and something….. so for tomorrow I’ve made a cold white bean and tunna salad.

So I took a small jar of white beans, emptied it in a sieve and then rinsed them.

In my favourite bowl I put: tomatoes cut in chunks, peas, a small can of tuna, carrots cut into small bits, chard (just like spinach) and then I added some salt and sprinkled some sunflower seeds, parsley and basil.

Then I added the drained white beans:

and VOILA!

 

it’s nothing special, really but it’s easy to make and tomorrow it will be nice to eat just because it’s cold…I’ll probably have my daughter complaining about the green bits!
